Cillar de Silos is a tribute to the monk who was historically in charge of the stewardship at the Silos Monastery, known as the Cillero, whose job is was to organize the pantry or cellar with the wine and food necessary for the day-to-day life of the religious order.
According to tradition, the supply of wine for the Silos Monastery during the 16th century was made in Quintana del Pidio.
As a testimony to this historical fact that accredits the wine lineage of the town, the Aragón García family opts for the sonorous name of Cillar de Silos to name its wines and winery. As a witness to history, Cillar de Silos also has an underground cellar dating from the end of the 16th century. The natural conditions of humidity and temperature (between 11, 5º and 12º C) are constant throughout the year and are ideal for the wines to finish the aging process in the bottle.

It all started in 1970, when Amalio Aragón laid the foundations of what our winery is today and began to buy small, high-quality plots, with the purpose of fulfilling his dream: to become a winegrower. In 1994 he founded the Cillar de Silos winery with his children and a year later our first harvest took place.
Cillar de Silos exports 40% of its wine production, while the remaining 60% is sold on the domestic market.
Without losing the passion of the early days, and as a result of almost three decades of effort and dedication, today Cillar de Silos is one of the leading wineries in Ribera de Duero. We feel a special devotion for our work, and especially for our land. We believe in a way of making wine, committed to excellence and tradition. The exclusive use of native grapes, the search for old vines and a continuous investment in the vineyard are what make Cillar de Silos different. Without forgetting our commitment to new technologies and the best barrels on the market, keeping the legacy of previous generations alive.
1970Pasión y origen: el fruto de una gran bodega familiar
Todo empieza en 1970, cuando Amalio Aragón levanta los cimientos de lo que es hoy nuestra bodega y comienza a comprar pequeñas parcelas de alta calidad, con el propósito de cumplir su sueño: convertirse en viticultor. En 1994 funda la bodega Cillar de Silos junto a sus hijos y un año más tarde tiene lugar nuestra primera cosecha.

THE GARDEN OF THE RIBERA DE DUEROWhere our vineyards born
Our wines come from more than 150 hectares of vineyards, within the Garden of Ribera del Duero. There are dozens of small plots, mostly less than one hectare, with an age ranging from 15 years to more than 100 years, with some pre-phylloxera plots.

Tinto FinoA unique variety
All the red grapes that we have in the winery are Tinto Fino: a native variety, with great personality and versatility, which have been found in the region since time immemorial. Its bunches are long and narrow, with thick skin and fleshy pulp and spherical berries of a bluish-black color. Its name is short for early, because it matures earlier than most red varieties.
In the wine, it presents an intense and deep colour with elegance and finesse on the nose and mouth, fruit maturity and good structure and balance. The most frequent aromas are those of ripe or acidic wild red and black fruits, with excellent acidity due to the altitude and the thermal difference. It has a magnificent capacity to age.

Although it is native and it is a century-old grape, for a long time it has gone unnoticed, almost forgotten, growing among the Tinto Fino vines. At Cillar de Silos, we are committed to the versatility and complexity of this white grape variety as one of the differential values of the winery.
Delicate and with character, the albillo mayor grape produces wines with a well-balanced and integrated acidity, with complex nuances. Our wines made with Albillo Mayor bring out all the expressiveness of the soil and of the Quintana del Pidio grape, with vines over 70 years old.
